Delsey K. Rishel, 81, of North Platte, passed away on March 26, 2023, at Great Plains Health. On September 29, 1941, she was born to Henry and Adeline (Miller) Meeker in Onawa, IA.
Raised in Onawa, IA, Delsey graduated from high school and then moved to Sturgis, SD, where she met Cullen Rishel. They were married on September 3, 1965, in Hartington, NE. Three sons were welcomed to the world from this union, Vernon, Bob, and Mark. The couple moved to North Platte where they worked and raised the boys.
Delsey worked briefly in the restaurant industry before receiving certification to work as a dietary manager at both the North Platte Senior Center and North Platte Care Center. Known for her exceptional cooking and baking, Delsey was especially good at baking zucchini bread, cookies, and candies. She was an outdoors woman, often found fishing, or just relaxing on the patio with her dogs, King, Lady, and Ellie May. Delsey was a long-time member of the Salvation Army. She was always so compassionate, kind, and caring; always willing to help those in need.
Survivors include her three sons, Vernon Roepke, Bob Roepke, and Mark Roepke; grandchildren, Nathaniel, Jessica, Andrew, Jordan, Brandon (Ashlie); great grandchildren, Ian, Kamaya, Kabel, Aaliyah, and Alex; other family and several friends.
Those preceding Delsey in death are her parents; husbands, Cullen; and siblings.

A memorial service will be held on Saturday, April 1, 2023, at 2 P.M. at the Salvation Army with Major Lynete Poff officiating. Inurnment will take place on Monday, April 3, 2023, at Fort McPherson National Cemetery at 11 A.M. Visitation will be on Thursday, March 30, 2023, from 12 P.M. to 5 P.M. at Adams & Swanson Funeral Home.
